Ingredients
| 1 — | large cucumber |
| ~2 cups — | greek yogurt |
| 4 — | cloves garlic |
| ½ — | lemon (juice) |
| 2 tbsp — | fresh dill |
| 1 tbsp — | fresh mint |
| — | salt, pepper, cayenne |
Method
Prep
- Peel and grate cucumber into a medium or large mixing bowl
- Sprinkle with ~1⁄2 tsp kosher salt, mix, and leave it for 10–15 mins
- Peel the garlic
- Gather herbs
- Cut dill off stems
- Slice mint into thin strips
- Wash and cut a lemon in half
Make tzatziki sauce
- Dump cucumber into a towel or some cheesecloth and wring out as much water as you can
- In a ~2 qt mixing bowl
- Add the yogurt and cucumber
- Use a garlic press to crush the garlic and add
- Squeeze in the lemon juice
- Stir in herbs
- Adjust seasoning with salt/pepper/cayenne
- Cover in contact with plastic and refrigerate for at least a few hours
