Shakshuka
Ingredients
finely diced onion or shallots
finely diced/sliced peppers
optional: crushed garlic
crushed tomatoes
either/both salsa cumin, tumeric, chile powder
salt, pepper, cayenne
eggs
Garnish
parsley
feta (or any crumbly cheese)
olive oil
toast
Method
Prep
Finely dice onion
Finely dice peppers
Crush garlic
Prepare crushed tomatoes
Mix spices together
Chop parsley
Make shakshuka
In a medium saute pan, add some oil and place over medium-high heat
Sautee onions and peppers until onions are translucent
Add garlic and seasonings and cook stirring for a minute or two
Add crushed tomatoes and scrape the bottom
Simmer sauce until veggies are tender
Taste and adjust seasoning
Prepare the surface for eggs
Add an egg to each spot
cover pan and simmer until eggs have cooked
