Shakshuka

Ingredients

finely diced onion or shallots
finely diced/sliced peppers
optional: crushed garlic
crushed tomatoes
either/both salsa cumin, tumeric, chile powder
salt, pepper, cayenne
eggs
Garnish
parsley
feta (or any crumbly cheese)
olive oil
toast

Method

Prep

  • Finely dice onion
  • Finely dice peppers
  • Crush garlic
  • Prepare crushed tomatoes
  • Mix spices together
  • Chop parsley

Make shakshuka

  • In a medium saute pan, add some oil and place over medium-high heat
  • Sautee onions and peppers until onions are translucent
  • Add garlic and seasonings and cook stirring for a minute or two
  • Add crushed tomatoes and scrape the bottom
  • Simmer sauce until veggies are tender
  • Taste and adjust seasoning
  • Prepare the surface for eggs
  • Add an egg to each spot
  • cover pan and simmer until eggs have cooked
