Roasted Chickpeas

Ingredients
1 (15 oz) can garbanzo beans or ~1 cup dried
~2 tbsp olive oil
kosher salt
cumin, pepper, cayenne, garlic, chili powder, lime juice, etc
Method
Prep (day before)
If using dried beans, cover them with ~3″ of water and let soak for ~a day
Roast Chickpeas
Preheat your oven to 400°F
Drain and rinse the garbanzo beans
Dry beans very well with a kitchen towel or paper towels
Discard the skins if using canned beans
Toss beans with olive oil and salt (not the spices, they will burn)
Roast until brown and crispy (40–60 minutes)
Season to taste with salt and spices
Let cool on a cooling rack
Notes
55 minutes was slightly too long, 50 seems perfect for my current oven and dried beans.
