Red Coleslaw
Ingredients

small head of red cabbage
1 shallot
1–2 peppers
Wet

cup buttermilk

⁄

cup mayonnaise
1 tbsp dijon mustard
1 tbsp apple cider vinegar
Method
Cut the cabbage in half
Core it and slice it thinly
Mince the shallots and peppers
Transfer everything into a big mixing bowl with a couple pinches of salt and grinds of pepper
In another mixing bowl, whisk together all the wet ingredients
Pour the buttermilk mixture over the cabbage and mix
Let it sit in the fridge for at least an hour, a day is better
Notes
This is an amazing side with fried chicken.
