Ramen

Ingredients

ramen noodles
soft boiled eggs
green onions
baby bok choy
mung bean sprouts
Pork Topping
200g ground pork or bacon
garlic
ginger
½ tsp sugar
1 tbsp chile paste
1 tbsp oyster sauce
1 tbsp mirin
Seasoning Paste
2 tbsp peanut butter
1 tbsp chile oil
1 tsp vinegar
2 tbsp soy sauce
1 tbsp mirin
optionally sichuan peppercorns
Broth
1 cup water
1 tbsp chicken btb
1 tbsp veggie btb
2 cups unsweetened soy milk

Method

Prep

  • Crush the garlic
  • Grate the ginger
  • Chop green onions into small pieces
  • Cut bok choy into halves or quarters

Make the spicy pork topping

  • Mix sauce
  • Cook bacon
  • Add garlic, ginger, green onion
  • Turn heat to high
  • Add sauce and cook until caramelized

Make the the seasoning paste

  • Whisk together all ingredients in a small bowl

Make the Broth

  • Boil some water and add btb paste in a small pot
  • Mix well
  • Add soy milk
  • Bring to a boil

Blanch/boil

  • Blanch bean sprouts and bok choy
  • Boil noodles

Assemble

  • In each serving bowl
    • Add half of the seasoning paste
    • Add half of the broth
    • Stir together
    • Add noodles, spread widely
    • Place mung bean sprouts along the edge
    • Place bok choy next to it along the edge
    • Place pork topping in the middle
    • Place green onions
    • Place a soft boiled egg
    • Garnish with crushed peanuts, sesame seeds, chile oil, etc
