Peppers Onions Potatoes Sausage Ingredients
| ~1 lb — | italian sausage links |
| ~1.5 lb — | yukon gold potatoes |
| 1 — | red or yellow onion |
| 3–6 — | peppers (poblano, etc) |
| — | canola oil |
| — | salt |
| — | herb de provence |
Method
- Brown the sausage links on both sides (~3 mins per side)
- Very roughly chop the onion and peppers and add to a giant mixing bowl
- Cut the potatoes into 1″ wide chunks and add to the bowl
- Cut the sausage links into ~2″ chunks and add to the bowl with all accumulated juices
- Add enough oil to coat the veggies
- Add ~1–2 tsp salt freshly ground pepper
- Add ~1–2 tsp Herb de Provence
- Use your hands to toss all the ingredients together
- Transfer to a roasting pan and make sure the potatoes aren't stacked on top of each other
- Roast at 450°F for ~1 hour
