Peppermint Patties

Ingredients
Filling
1 cup

sweetened condensed milk
1½ tsp

peppermint extract
~5 cups

powdered sugar, plus extra for rolling
Coating
4 cups

dark chocolate chips
2 tsp

coconut oil
Method
Make the peppermint filling
In a medium mixing bowl:
Add sweetened condensed milk and peppermint extract
Gradually mix in powdered sugar until you have a workable dough
On a work surface dusted with powdered sugar:
Roll out the dough to desired thickness
Cut into circles using a cookie cutter
Transfer rounds to a parchment-lined baking sheet
Freeze until firm
Melt the chocolate
Set up a double boiler:
Fill a medium pot with ~an inch of water
Place a heatproof bowl on top, ensuring it doesn't touch the water
Add chocolate chips and coconut oil to the bowl
Heat gently, stirring until completely melted and smooth
Make the peppermint patties
Line another baking sheet with parchment paper
Using two forks, dip each frozen peppermint round in the melted chocolate
Place coated patties on the prepared baking sheet
Refrigerate until chocolate is set
Store in freezer or fridge
