Almond Pancakes
Ingredients

eggs
2 tbsp

olive oil
2 tbsp
—
maple syrup
¾ tsp
—
vanilla extract

pinch kosher salt
1 cup
—
almond flour
1 tsp
—
baking powder
Method
Make the batter
All all ingredients to a medium–large mixing bowl
Whisk until thoroughly combined
Let sit for 10 minutes
Make the pancakes
Put a large nonstick skillet over medium heat
Brush or spray lightly with canola oil
Use a spoon to pour out as many pancakes as you can fit at a time
Cook on the first side until bubbles form and holes hold
Flip and finish cooking
Keep warm in a very low-temp oven while you cook the rest
Notes
This is really good with a fruit compote and/or sliced bananas.
