Oatmeal Cookies

Ingredients

Dry
90g 100%all-purpose flour
½ tsp 2.8%*kosher salt
¼ tsp 1.4%*baking powder
¼ tsp 1.4%*baking soda
115g 127.8%granola
60g 66.7%toasted rolled oats
Wet
113g 125.6%unsalted butter, room temp
105g 116.7%brown sugar
50g 55.6%granulated sugar
1 55.6%*large egg
1 tbsp 16.7%*oat milk
1 tsp 5.6%*vanilla extract
¼ tsp 1.4%*cinnamon
Add-ins
100g toasted pecans
100g chocolate chips

Method

Prep

  • Bring butter and egg to room temp

Make the cookie dough

  • In a medium mixing bowl, whisk together the flour, salt, baking powder, and baking soda
  • In a medium-large mixing bowl, cream the butter and sugar together with a hand mixer
    • Add the egg, vanilla, and cinnamon, and mix until well combined
    • Mix in the dry ingredients just until the flour disappears
    • Fold in the granola and oats and any addins-and mix until they're fully distributed
  • Cover in contact with plastic and refrigerate for an hour to overnight

Bake

  • Preheat oven to 350F
  • Prepare a baking sheet with parchment paper
  • Use a 1 1/2 Tablespoon scoop and arrange in a 3-2-3 pattern
  • Bake until golden brown, around 15-17 minutes
  • Let cool completely on a wire rack
