Miso Marinade

Ingredients

¼ cup white miso
2 tbsp mirin
1 tbsp rice vinegar
1 tsp brown sugar
1 tsp soy sauce

Method

Make the marinade

  • In a small or medium mixing bowl
    • use a whisk or spoon to mix all the ingredients together
  • Keep refrigerated until use

Use for salmon

  • Cover salmon with the marinade and let sit refrigerated for 15 minutes - 4 hours before service
  • Preheat oven to 400F
  • Transfer salmon on a foil-lined baking sheet and pile more miso marinade on top
  • Place in the top of the oven and change to broil
  • Broil the salmon until the marinade caramelizes and it just turns flaky (around 8 minutes, depending on the salmon and your oven)
