Ingredients
| ¼ cup — | white miso |
| 2 tbsp — | mirin |
| 1 tbsp — | rice vinegar |
| 1 tsp — | brown sugar |
| 1 tsp — | soy sauce |
Method
Make the marinade
- In a small or medium mixing bowl
- use a whisk or spoon to mix all the ingredients together
- Keep refrigerated until use
Use for salmon
- Cover salmon with the marinade and let sit refrigerated for 15 minutes - 4 hours before service
- Preheat oven to 400F
- Transfer salmon on a foil-lined baking sheet and pile more miso marinade on top
- Place in the top of the oven and change to broil
- Broil the salmon until the marinade caramelizes and it just turns flaky (around 8 minutes, depending on the salmon and your oven)
