Mashed Potatoes
Ingredients
Potatoes (russet or yukon gold)
Method
Bring a large pot of salted water to a boil
Wash and scrub potatoes with a green scrub pad
Cut into uniform chunks
Boil until fork tender, then boil a few minutes longer
Drain in a colander
Transfer back to the pot and add salt, pepper, cayenne, butter
Mash until potatoes are mostly smooth, but avoid overworking them
Stir in sour cream
Mix in green onions
Taste and adjust seasoning
