Billionaire's Franks & Beans

Ingredients

Sausage and Veggies
1 yellow onion
1 poblano or other green pepper
1–2 fresh cayenne peppers, or other hot red pepper
1 pound hot dogs (or any sausage)
2 (15-oz) cans cannellini beans
Soup Base
~¼ cup ketchup
~1 tbsp Dijon mustard
~½ tsp Worcestershire sauce
~2½ cup chicken broth
salt and freshly ground black pepper
Finish
1–2 green onions

Method

Prep

  • Finely dice the yellow onion
  • Finely dice the peppers
  • Drain and rinse the beans
  • Score and slice the sausage into 12″ rounds

Cook the sausage and veggies

  • Put a large pot over medium heat
  • Melt ~2 tbsp butter
  • Add onions and peppers and salt
  • Cook until onions are translucent and peppers are soft
  • Add sausage and sauté for a few minutes

Make the soup

  • Add ketchup, mustard, worcestershire sauce, and chicken broth
  • Stir together and add beans
  • Simmer for ~30 mins (stirring occasionally) or until ready
    • Smash some beans while stirring to thicken the soup
    • Add chicken broth as needed
  • Taste and adjust seasoning
  • Before serving, slice and add in green onions
