Method
Prep (night before)
Cover garbanzo beans with a few inches of water and soak overnight
Prep
Finely dice onion
Mince garlic
Chop parsley
Make the dough
Drain beans and transfer to a food processor
Add rest of the dough ingredients
Process the mixture until it's finely ground but not a puree
Use a spatula to make sure everything is mixing in
Let the dough rest in the fridge for a couple of hours
Form and Fry
Add oil to a cast iron pan and bring to 350°F
Use a sorbet scoop to portion the dough into balls
Form balls into flat patties
Fry at 350°F for ~2–3 minutes per side (until brown and crispy)
