Ingredients

225g (1 cup) dry garbanzo beans
½ yellow onion
½ cup chopped flat leaf parsley
4 garlic cloves
1 tbsp all-purpose flour
2 tsp lemon juice
1½ tsp salt
1 tsp cumin
½ tsp coriander
¼ tsp baking soda
⅛ tsp cayenne
oil for frying

Method

Prep (night before)

  • Cover garbanzo beans with a few inches of water and soak overnight

Prep

  • Finely dice onion
  • Mince garlic
  • Chop parsley

Make the dough

  • Drain beans and transfer to a food processor
  • Add rest of the dough ingredients
  • Process the mixture until it's finely ground but not a puree
  • Use a spatula to make sure everything is mixing in
  • Let the dough rest in the fridge for a couple of hours

Form and Fry

  • Add oil to a cast iron pan and bring to 350°F
  • Use a sorbet scoop to portion the dough into balls
  • Form balls into flat patties
  • Fry at 350°F for ~2–3 minutes per side (until brown and crispy)
