Method
Prep
- Finely dice onion
- Crush garlic
- Grate cheese
- Drain and rinse beans
- Preheat oven to 350°F
Make the filling
- Add some olive oil to a pan
- Cook onions with salt until they turn translucent
- Add garlic and cook for another minute
- Add jackfruit and beans
- Add chile powder and salt to taste
Assemble
- Ladle some sauce on the bottom of a casserole dish
- Add cheese to a tortilla
- Top with filling
- Roll into a tube and place seam down in casserole dish
- Keep going until full
- Top with enchilada sauce and cheese
Bake
- Bake at 350°F until the cheese is browned and the sauce is bubbly.
- Takes ~25-35 mins depending on how hot the filling is when you assemble.
