Method
Make the dough
Dump all ingredients in a stand mixture bowl
Using a dough hook, knead until smooth
Add butter and knead until incorporated
Form into a tight ball and let rise until doubled in size (~2 hours)
Shape the dough
Divide into 12 equal parts (74-75g) and preshape into balls
Let rest for 20 minutes
Push out the air and form into the final shape
Looks sorta light a hockey puck
Let rest covered until doubled in size (1 hour)
Uncover and let it dry out for 10 minutes
Fry the donuts
Heat oil to 350F and fry for 2 minutes, smooth side first
Flip and fry the other side for 2 minutes
Remove to rack to dry
Toss in sugar
Fill with custard cream
