Chile Rellenos

Ingredients

  • n Poblano peppers
  • n + 1 eggs
  • jack cheese
  • salsa

Method

Roast the peppers

  • Roast under the broiler until charred all over
  • Let steam covered in a bowl for 5 minutes
  • Using gloves, gently peel most of the skin off using a bowl of water to help remove it from your fingers

Make the batter

  • Separate the egg whites from the yolks
  • Whisk the whites until stiff
  • Add a tablespoon of flour, a pinch of salt
  • Add the yolks and continue whisking until incorporated

Stuff peppers

  • Slice peppers and remove seeds
  • Stuff with cheese and any other filling
  • Roll in flour
  • Coat in batter

Pan fry

  • In a pan over medium heat with oil coating the bottom
    • Add rellenos, cook for a few minutes
    • Use two spatulas to flip
    • Cook until all sides are done and the cheese is melty
