Brownies

Ingredients

3 ounces 89.5%unsweetened chocolate, chopped
½ cup 126.3%*unsalted butter
2 105.3%*large eggs
265g (1¼ cups) 278.9%white sugar
¾ teaspoon 3.9%*kosher salt
1 teaspoon 5.3%*pure vanilla extract
95g (⅔ cup) 100%all-purpose flour

Method

Prep

  • Butter an 8"x8" baking dish and optionally line with parchment paper
  • Chop the chocolate

Make the batter

  • Melt the butter and chocolate over a pan with barely simmering water
    • when it's about 80% melted, stir together until smooth
  • In a medium mixing bowl using an electric hand mixer
    • Add the eggs, sugar, salt and vanilla extract and whisk until ribbon stage
    • Add the chocolate and whisk on high speed for a few minutes
    • Add the flour and whisk on low speed until the flour just disappears
  • Transfer into the prepared baking dish and smooth out the top

Bake

  • Bake at 350F for about 35 minutes
    • a toothpick 2" from the edge should come out clean
  • Wait until completely cool before cutting
