Belgian Waffles

Ingredients

dry

  • 90 g all-purpose flour
  • 30 g cornstarch
  • 1 tsp baking powder
  • 14 tsp kosher salt

wet

  • 200 g oat milk
  • 1 large egg
  • 42 g melted butter or oil
  • 1 tbsp granulated sugar
  • 12 tsp vanilla extract

Method

Make the batter

  • In a medium mixing bowl, whisk together 90 g flour, 30 g cornstarch, 1 tsp baking powder, and 14 tsp salt
  • In a blender pitcher, blend together 200 g milk, 1 large egg, 42 g butter, 1 tbsp sugar, and 12 tsp vanilla
  • Transfer the flour mixture into the pitcher and blend until smooth
  • Let the batter rest for ~10 minutes while preheating

Cook waffles

  • Preheat waffle maker
  • Pour half of the batter into the waffle iron, flip and do the other side
  • Cook until golden brown and crispy (usually 4-5 minutes)
  • Serve with butter and syrup

Notes

The cornstarch helps create a crispy exterior while keeping the interior light and fluffy. If the batter seems too thick after resting, you can thin it with a little more oat milk.
