In a medium mixing bowl, whisk together 90 g flour, 30 g cornstarch, 1 tsp baking powder, and 1⁄4 tsp salt
In a blender pitcher, blend together 200 g milk, 1 large egg, 42 g butter, 1 tbsp sugar, and 1⁄2 tsp vanilla
Transfer the flour mixture into the pitcher and blend until smooth
Let the batter rest for ~10 minutes while preheating
Cook waffles
Preheat waffle maker
Pour half of the batter into the waffle iron, flip and do the other side
Cook until golden brown and crispy (usually 4-5 minutes)
Serve with butter and syrup
Notes
The cornstarch helps create a crispy exterior while keeping the interior light and fluffy. If the batter seems too thick after resting, you can thin it with a little more oat milk.
